Sarah’s Tips & Variations

Cheese Swap: Change up the flavor of the dish by using pepper jack cheese or Swiss cheese.

Meat Swap: Though ground breakfast sausage is the best choice for this casserole, you can use a pound of cooked and crumbled bacon or 2 cups of diced ham instead.

Veggies: Add bell pepper, mushrooms, green onions and spinach to make the dish more hearty.

Check for doneness: The center should be fully set—if it still jiggles, it needs more time.

Add heat: Add a few chopped jalapenos or a can of fire roasted peppers.

Shortcut: Use bagged pre-browned sausage crumbles for an easy dump and go breakfast.

  • Add half of the tater tots to the slow cooker.
  • Spread over the sausage onion mix over those tater tots.
  • Next add the remianing tater tots. (do this in a circular design).
  • In a large bowl, whisk the eggs, milk and seasoning.
  • Sprinkle over the cheese.
  • Pour this over the tots and sausage in the slow cooker.
  • Cook on LOW for 5 hours or until the center is set.
  • Scoop, serve and enjoy!

Sarah’s Notes

To get the exact amount of tater tots needed for the topping. I arrange the design in the bottom of the slow cooker FIRST, take those out and set aside. Then put the other half of tater tots down, this ensures you have the exact amount for the topping.

What a delicious dish! We sure enjoyed the 2 rows of tater tots and layering of this casserole. I added paprika, a sprinkle of curry and some Lipton soup mix. My teenaged son ate 3 helpings! Thank you for this recipe. I would encourage others to try this!

Can you make ahead and freeze?

    1. Sarah Olson says:

I’m unsure how this one will freeze. I’ve not had luck freezing potatoes of any kind.

I would probably get 2 8-oz. packages of Jimmy Dean sausage crumbles which are pre-cooked…esp. if I was making this on a hot humid day where I don’t wanna be standing over the stove cooking anything. For onion flavor I would probably use Lipton packets.

When you mentioned beef in the instructions, you probably meant pork.
