For the cobbler layer:

  • 1 ¼ cup all purpose flour
  • ¾ cup sugar
  • 1 ½ tsp. baking powder
  • ½ tsp. salt
  • 1 cup milk
  • 1 tsp. vanilla extract
  • 2 Tbsp. salted butter, melted

For the blueberry layer:

  • 2 cups blueberries, rinsed and drained

For the topping

  • 2 Tbsp. sugar

Instructions 

  • Lightly coat your slow cooker with nonstick spray.
  • In a medium bowl, whisk together the dry cobbler ingredients—flour, sugar, baking powder, and salt.
  • Add in the vanilla, milk, and melted butter, and stir gently just until combined (a few lumps are okay—don’t overmix).
  • Pour the batter evenly into the slow cooker.
  • Top with the blueberries, then sprinkle the remaining sugar over them.
  • Cover and cook on HIGH for 2 hours and 15 minutes, or until the center is set.
  • Avoid lifting the lid during cooking.
