This one-pot Slow Cooker Seasoned Chicken, Potatoes and Green beans has a homemade dressing/marinade and will be your new favorite healthy dinner.
If you love this one-pot meal you need to see my Garlic Butter Chicken and Veggies, that recipe has the same easy one pot meal concept as this recipe. Or if you need just a recipe for chicken breasts, try my easy chicken breast recipe.
I’ve seen oven versions of this recipe, but most include an Italian dressing seasoning packet.
Instead of using a seasoning packet to flavor the sauce in this dish, I make a simple mixture of olive oil, lemon juice, garlic, and dried seasonings.
How to make a one pot chicken dinner:
- Boneless skinless chicken breasts – Can use chicken thighs or tenders.
- Fresh green beans – Frozen works well too.
- Red Potatoes – Cut into quarters or about 1/2 inch pieces.
- Homemade Italian dressing – Super quick to make, see my recipe below.
For the homemade dressing:
- Fresh lemon juice
- Olive oil
- Oregano
- Salt and pepper
- Onion powder
- Minced garlic
Can I use lemon juice out of a squeeze bottle?
- No. This recipe isn’t the time or place to use squeeze bottle lemon juice; the recipe will taste off if you use it.
- Lemons are cheap, be sure to grab them at the store.
Can I use a different vegetable than green beans?
Yes! If you aren’t a green bean fan, then try one of these substitutes.
- Broccoli
- Asparagus
- Canned or fresh corn
- Baby carrots or sliced carrots
- Extra potatoes
Can I use the Italian dressing mix instead of making the homemade dressing?
- Yes! You can forgo all the dressing ingredients and drizzle a half cup of butter over the seasoned chicken, potatoes and green beans then sprinkle an Italian dressing mix over.
- Follow the same cooking directions below.
- You can find the Italian dressing mix on the salad dressing aisle next to the ranch dressing packets.

This was the most bland crock pot recipe I have ever tasted. This was what I suspect food on The Mayflower was like before the British discovered spices.
How it is rated 5 stars is beyond me. Are these reviews by people who have only boiled food?
You all are invited to my BBQ but please and I repeat PLEASE do not bring a dish.
Definitely a KEEPER! We loved it!!! I used Costco stir fry veggies and red potatoes or sweet potatoes! Very good either way. And love homemade dressing. I double it.
Having it again tonight!
Yum
I cooked on high for 5 hours. The chicken was very dry and the potatoes were not yet cooked. I ended up finishing the potatoes in the air fryer for 20 minutes. The green beans were cooked, but had boiled in the amount of liquid that had come out of them as I had put them in frozen. I don’t think I’ll make this again.
Was super wet and barely any flavor. Disappointed.
This recipe was forwarded to me by a friend, and I found your website to view pictures, comments, and your video. You have a new fan.
Followed the recipe and added about 1 1/2 cups of chicken bone broth and 1/4 cup of chardonnay because we like a lot of sauce.
Sprinkled some fresh sweet basil, thyme, and paprika over the whole thing. Looked and smelled great while cooking. Was done in 4.5 hours on high, but I did warm the sauce ingredients first before adding to the crockpot because my chicken broth was refrigerator cold. The chicken was tender, moist, and the taste was amazing. This recipe is a keeper, for sure. Great way to serve a complete dinner without mixing everything together. Thank you. Love your site.
Glad to have you here! I love your addition and will have to try.
I used your recipe… (just waiting on husband to get back with Chardonnay) and I’ll add the broth with it… here’s hoping! Think I’ll cook on high just because it’s chicken.
Very simple and easy! Turned out great! I cooked mine on low for 3-3.5 hrs and it was ready!
Sarah,
What is the best way to reheat this dish? Thank you.
Delicious!!!! Easy to make! First time ever using a slow cooker.
I’m glad you tried this for your first recipe! You have so many more to try now!
Can I use frozen chicken breast?
Thawed chicken is best for food safety. I’ve never tested with frozen.
The veggies and chicken came out tender. I wasn’t as impressed with the flavor of the dressing (I followed the recipe exactly)
This is so delicious and easy to make. Only one one pot to clean–the crock pot. The chicken, potatoes and green beans are so tender and flavorful! I’ve passed this recipe onto many of my friends. Thank you!
Can i use bottled it drsg. How much?
About a cup and a half.
Can i add ranch drsg instead of Italian?
Yes, but it may curdle.
can you use boneless chicken tenderloins? if so, would you still let it cook for the same amount of time/heat
Yes, you can use tenderloins. You will have to cook the same amount of time so the potatoes will get tender.
I used bottled lemon juice..ugh
I’m guessing it will be tart from some of the comments?
I guess we will see how it turns out.
