This one-pot Slow Cooker Seasoned Chicken, Potatoes and Green beans has a homemade dressing/marinade and will be your new favorite healthy dinner.

I’ve seen oven versions of this recipe, but most include an Italian dressing seasoning packet.

Instead of using a seasoning packet to flavor the sauce in this dish, I make a simple mixture of olive oil, lemon juice, garlic, and dried seasonings.

How to make a one pot chicken dinner:

  • Boneless skinless chicken breasts – Can use chicken thighs or tenders.
  • Fresh green beans – Frozen works well too.
  • Red Potatoes – Cut into quarters or about 1/2 inch pieces.
  • Homemade Italian dressing – Super quick to make, see my recipe below.

For the homemade dressing:

  • Fresh lemon juice
  • Olive oil
  • Oregano
  • Salt and pepper
  • Onion powder
  • Minced garlic

Can I use lemon juice out of a squeeze bottle?

  • No. This recipe isn’t the time or place to use squeeze bottle lemon juice; the recipe will taste off if you use it.
  • Lemons are cheap, be sure to grab them at the store.

Can I use a different vegetable than green beans?

Yes! If you aren’t a green bean fan, then try one of these substitutes.

  • Broccoli 
  • Asparagus
  • Canned or fresh corn
  • Baby carrots or sliced carrots
  • Extra potatoes

Can I use the Italian dressing mix instead of making the homemade dressing?

  • Yes! You can forgo all the dressing ingredients and drizzle a half cup of butter over the seasoned chicken, potatoes and green beans then sprinkle an Italian dressing mix over.
  • Follow the same cooking directions below.
  • You can find the Italian dressing mix on the salad dressing aisle next to the ranch dressing packets.

Slow Cooker Seasoned Chicken, Potatoes and Green Beans

A healthy one pot slow cooker recipe. A homemade marinade pour over chicken, red potatoes and fresh green beans.

Ingredients 
 

  • 2 lbs. Boneless Skinless Chicken Breasts
  • 1/2 lb. fresh green beans, trimmed (about 2.5 cups)
  • 1 1/4 lb. diced red potatoes, about 4 cups

Homemade dressing ingredients:

  • 1/3 cup FRESH lemon juice (NOT BOTTLED), (1 large or 2 small lemons)
  • 1/4 cup olive oil
  • 1 tsp. dried oregano
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. onion powder
  • 2 garlic cloves, minced

Instructions 

  • Start by placing the chicken the middle of the slow cooker. Next, add the green beans on one side. Then for the potatoes, you will need to mound them high off to the other side.
  • In a medium-sized bowl, whisk together the lemon juice, olive oil, oregano, salt, pepper, onion powder, and garlic cloves.
  • Pour this mixture evenly over the chicken, green beans and potatoes.
  • Cover and cook on HIGH for 4 hours or LOW for 7 hours, without opening the lid during the cooking time.
  • Note- Do NOT use lemon juice out of squeeze bottle, the recipe will not turn out correct.

Why can’t I use bottled lemon juice?
  • Bottled lemon juice in recipes can taste bitter.
  • This recipe has been tested with fresh lemon juice. Many reviews who have used bottled instead have not liked the meal for the flavor of the bottled lemon juice isn’t right for this recipe.

    We really enjoyed this. I’ve only used my slow cooker for casseroles before and wondered whether this might dry out – but it didn’t and was really tasty. Really good to be able to prepare the whole meal in advance.

    I discovered your recipe a couple years ago and it has become a family FAVORITE! I sometimes use Balsamic Vinegar and olive oil which changes the flavor but is amazingly delicious.

    I think you should pan fry your chicken first b-4 going in to crock-pot!!

      Good idea. All protein tastes better when its been pan fried before putting it into a crockpot. Pan frying gives a deep/rich taste rather than a boiled taste.

      General comment: bottled lemon or lime juice is HORRID. As the website author said, “Lemons are cheap”. They can always be bought in the summer and frozen, juiced or whole, so you don’t have to worry about them going bad.

    My family really enjoyed this! I had to cook on high and was worried the chicken might be too dry, but it was actually very moist and flavorful. Super easy and healthy dinner that even my picky husband and kids liked.

    Made this but added chicken broth to the sauce and less lemon juice. Then for the last 45 minutes I added mushrooms on top of the green beans. It was delicious!

    such a hit at my house! i didnโ€™t have fresh lemons or garlic so i used lemon juice from the bottle & minced garlic from the glass jar and it really tasted good! i decided to add carrots in as well which was very good. next time iโ€™ll try the fresh lemon and garlic and add more amount of veggies in since there was a lot of chicken left over

      Yes lemon juice garlic and olive oil is an Arabic/ lebanese mixture for a lot of food I cook.
