While the chocolate is melting, line a baking sheet with parchment or wax paper.
Arrange the unwrapped Rolos on the sheet, leaving space between each one.
Once the chocolate mixture is melted and smooth, give it a gentle stir. Using a spoon, carefully pour the chocolate mixture over each Rolo on the baking sheet, ensuring they are well-covered.
Immediately sprinkle your choice of sprinkles over each turtle before the chocolate sets.
Let the turtles cool at room temperature for about 1 hour, or until the chocolate firms up. For a quicker set, refrigerate for 30 minutes.
Once set, gently remove the turtles from the parchment paper. Store leftovers in an airtight container at room temperature or in the fridge. Enjoy!
