Slow Cooker Sweet Chili Pork combines tender pork loin with a sweet and savory onion sauce. No browning needed, just let the crockpot do the work and serve over rice.
Add the pork loin into the slow cooker. Add the diced onion around the pork.
Add the soy sauce, rice vinegar and toasted sesame oil.
Pour over the Sweet Chili Sauce.
Place the lid on the slow cooker.
Cook on LOW for 5-6 hours or until tender.
Remove the pork from the slow cooker and slice or shred (depends on how long you cook it).
In a small bowl, whisk together the cornstarch and water (I do this with a fork). Add the cornstarch slurry to the sauce in the slow cooker, stir. Turn the slow cooker to high, replace the lid, and let it thicken. This may happen immediately, or it may need 10 minutes or so.
Serve the pork with rice and drizzle over the sauce.
