oz.
bag Hurst's Hambeens Cajun 15 bean Soup Mix
(save the cajun seasoning packet to add at the end of the cooking time.

lbs.
smoked turkey
(cubed in 1 inch pieces) I buy a chunk of smoked turkey breast from the deli and cube myself. See notes for other options.

large leek
(dark green parts discarded)

red bell pepper
diced

carrots
peeled and diced

celery ribs
diced

Worcestershire sauce

Instructions
Note before starting that you want to wait to add the cajun seasoning until the end.
Rinse and sort beans, discarding any debris. Add the beans to the slow cooker. Save the Cajun flavor packet for after the entire cooking time is up.
Pour over the chicken broth.
Add the cubed turkey, vegetables and Worcestershire sauce.
Cook on HIGH for 5-6 hours.
When the cooking time is up, add the Cajun seasoning packet and stir. Add salt to taste.
Serve and enjoy!

Variations:
Other smoked turkey options include smoked turkey wings or smoked turkey drumsticks.
If you have leftover turkey, add it to the soup along with 1/2 teaspoon of hickory smoke for extra depth.
Not a fan of Cajun flavors? Use Hurst's Hambeens regular 15 Bean Soup Mix with the included ham seasoning packet instead.
Additional vegetables you can add are mushrooms, green beans, or canned diced tomatoes.
Serving ideas:
Serve the Smoked turkey Cajun 15 Bean Soup with cornbread! It's always a winner.
If you are trying to stretch the amount of servings, consider serving over rice.
Toppings we love to add are shredded cheddar cheese, sour cream, saltine crackers and a dash of hot sauce.
