Slow Cooker Lumberjack Casserole
This lumberjack casserole is a hearty meat and potato dish! Tastes wonderful with the addition of tomatoes, kidney beans and cheese.

lean ground beef
I use 7% fat

small russet potatoes
cubed

sweet yellow onion
diced

tsp.
onion powder
1
tsp.
garlic powder

tsp.
chili powder

tsp.
salt

freshly ground pepper

can petite diced tomatoes

can kidney beans
drained

can cream of mushroom soup

Instructions
Cook the ground beef and onions together in a skillet on the stove top. Brown and crumble, drain off any grease.
Add remaining ingredients to the slow cooker (except the cheese).
Cook on low for 5-6 hours.
When the cooking time is up, stir, and sprinkle the casserole with cheese and serve.

Variations
Ground turkey or ground chicken can be used instead of ground beef.
Other vegetables that can be added are carrots, green beans or mushrooms.
Campbell's tomato soup is great instead of the diced tomatoes (undiluted).
How to Serve
Spoon the lumberjack casserole onto plates or bowls. This is a filling, complete meal.
Add a green salad and dinner rolls for an even more hearty meal.
This can also be served over white rice to stretch out the meal and serve more people.
