Combine all the remaining ingredients except the bacon.
Pour over the roast, then cook on high for 6 hours or low for 8 hours.
When the roast can easily be pulled apart with two forks. Shred the meat and place back in the pan with the sauce.
Add the bacon and cook for another 30 minutes.
Serve on buns or in tacos.
Notes
Place any remaining pork in an airtight container and keep in the fridge for up to 4 days. Reheat in the microwave or on the stovetop until warmed throughout. It makes great leftovers!
Any flavor of barbecue sauce can be used, even spicy!
