In a large bowl combine all the ingredients except a half cup of cheese and a few tablespoons of the green onion.
Spray the slow cooker with non-stick spray. Add the potato mixture to the slow cooker and spread evenly. Add the remaining cheese and place lid on slow cooker.
Cover and cook on low for 5 hours without opening the lid during the cooking time.
Sprinkle with the leftover green onions and serve!
