This corned beef hash texture is a mix of homemade and canned corned beef hash. The potatoes are nice and soft, like the canned kind from cooking in that amazing broth, and the beef has that same texture of homemade corned beef hash.
Don't have russets? I like to make this with red potatoes on days I don’t feel like peeling anything, and I want to dump it and go.
I leave the corned beef spice packet out for this recipe, but if you want a more traditional corn beef flavor versus corn beef hash, add it.
I think the only thing you need to serve with this is a nice sunny-side-up egg. You can choose to serve it with your favorite egg style.
