Place chicken breasts on the bottom of the slow cooker, then chopped vegetables, seasonings, salt, garlic, and ground pepper.
Pour stock and water and cook on low for 4 hours.
Carefully shred chicken with 2 forks in or out of the slow cooker
Add the tortellini. Cook on HIGH or 30 more minutes.
Serve with fresh parsley.

How long will the soup keep for after cooking?The soup can be stored in an airtight container in the refrigerator for up to 5 days. The noodles can absorb a lot of the broth, so you may want to warm it up with additional stock or a mixture of stock and water.3.
