Add the chuck roast to the slow cooker. Add the seasonings, onion, sun-dried tomatoes (with their oil), and tomato paste on top.
Pour over the wine, and stir the tomato paste into the onions, and other ingredients on top of the roast.
Place the lid on the slow cooker and cook on HIGH for 5-6 hours, or on low for 8-9 hours.
When the cooking time is up, shred the beef with two forks. If you want to remove any fatty pieces, it's easier to shred the meat on a plate instead of in the slow cooker.
In a small bowl, mix together the heavy cream and cornstarch until smooth. Pour the mixture into the beef and sauce. It should thicken up immediately.If it does not thicken right away, turn the slow cooker to HIGH, place the lid on the slow cooker and cook for another 5-10 minutes, or until the sauce has thickened.
Serve the shredded meat and sauce with your desired sides.

If your chuck roast is larger, you may need to season more - you can do this before or after cooking.No Italian seasoning? Use a mixture of oregano, thyme, and basil instead.
