Slow Cooker- 6 quart or larger (I own and use this one from Crock-Pot)
Ingredients

lb.
lean ground beef

cups
cubed russet potatoes
I used one very, very large potato - you will most likely need

yellow onion
diced (about

red bell pepper
diced (about

black beans
drained and rinsed well

oz.
can Mexicorn
drained (or any small can of corn)

cayenne pepper

box beef broth

heavy cream

block sharp cheddar cheese
shredded
Instructions
In a skillet on the stove top over medium high heat, brown the ground beef. Crumble and drain off fat (if any).
Add the cooked ground beef, vegetables, beans, corn, spices and broth. Stir.
Place the lid on the slow cooker and cook on LOW for 6-7 hours or until the potatoes are tender.
When the cooking time is up, add the heavy cream, then slowly stir in the shredded cheese
