All the flavors of a reuben sandwich in a dip! Perfect for parties or an alternate meal for St. Patricks day.

Slow Cooker - 4 quart or larger (I own and use this one from Crock-Pot)
Ingredients
16
oz.
cream cheese
softened (two 8-oz. pkgs.)
1
lb
deli sliced corned beef
roughly chopped
2
cups
swiss cheese
shredded
1
cup
sauerkraut
drained
1
cup
sour cream
¾
cup
thousand island dressing
Serving suggestions:
Rye bread
Rye chips and crackers
French bread

Instructions
In a large bowl, combine all the ingredients and mix until well combined.
Transfer the corned beef mixture to a 4 quart or larger slow cooker bowl.
Cook on LOW heat for 2 hours or until the cheese has melted and the dip is hot and bubbling.
Garnish with sliced green onion or parsley if desired. Serve with rye chips, crackers or bread. Enjoy!
Notes
I don't recommend cooking on HIGH as the dip could burn or the cheese could separate.
Store leftovers in the refrigerator for up to 3 days in an airtight container.
Reheat in the oven or microwave.
Homemade corned beef could be used in this recipe as well.
