Slow Cooker Green Beans and Potatoes {with bacon}

Hearty yet light and delicious is the perfect description for this slow cooker green beans and potatoes dish. Perfectly tender vegetables and made with PLENTY of butter.

Ingredients

01 5 slices bacon

02 2 lbs. green beans

03 1 1/2 lbs. red potatoes

04 1 medium sweet yellow onion

05 1/2 cup beef broth

06 1 tsp. dried leaf thyme

Ingredients

01 1 tsp. salt

02 1/2 tsp. black pepper

03 6 Tbsp. salted butter

04 Slow Cooker- 6 quart or larger

STEP 1

Fry the bacon until it  becomes almost crispy. Add all the other ingredients & bacon to the crock pot – reserve the butter for later.

STEP 2

Cook on low for 6 hours or High for 4 Hours. Add additional time if needed; the timing will depend on how thick your potatoes are cut.

STEP 3

Before you’re ready to serve, add the butter into the crockpot and stir. Serve & enjoy!
