THE MAGICAL SLOW COOKER
Make a big batch of these slow cooker mashed potatoes for your dinner or even a get-together. This recipe is great alongside turkey or ham.
Peel your potatoes. Rinse them, then dice them into 1/2 inch to one-inch cubes. You really want to make sure there is no dirt on the potatoes. Add the potatoes to the slow cooker.
Along with the peeled potatoes in the slow cooker, add enough water to cover.
Place the lid on the slow cooker. Cook on HIGH For 4 hours.
After the cooking time is up, drain off the water.
Add a stick of butter to the potatoes. Use a handheld mixer and blend in the slow cooker.Add the heavy cream, salt, and pepper. Continue blending until light and fluffy.
DO NOT OVERMIX, or they will turn gluey. Taste and see if you want to season with additional salt. Serve and enjoy!
