Add all ingredients to your slow cooker except the bay leaf. Stir. Add the bay leaf on top so it's easier to find after the cooking time is up.
Place lid on crockpot and cook on high on low for 7-8 hours.
Remove bay leaf prior to serving.
Garnish with parsley, if desired. Enjoy!

Use different vegetables. You can add other vegetables like adding broccoli to the stew. Peas are another delicious choice to add to slow cooker sweet potato stew.
Add some heat. Adding red pepper flakes to the sweet potato stew. Wait until the end of the cooking process an add some red pepper to give it some heat that goes so well with the sweetness of the potatoes.
