Slow Cooker Pineapple Jalapeno Pork Tacos
Tender pork shoulder with pineapple and jalapenos. Makes a great taco filling.

Equipment
Slow Cooker- 6 quart or larger (I own and use this one from Crock-Pot)
Ingredients
3
lbs.
pork shoulder
pork butt
1/2
tsp.
salt
1/4
tsp.
pepper
2
garlic cloves
minced
1/4
cup
minced cilantro
1
small white onion
20
oz.
can pineapple chunks (do not drain)
2
jalapenos
sliced
1
small lime
For serving
corn tortillas
cheese
I used sharp white cheddar
additional sliced jalapeno
jimica
would be good too!

Instructions
Add the pork to the slow cooker sprinkle over the salt and pepper. Add the garlic, cilantro, onion, pineapple and it's juices and jalapeno.
Cut the lime in half and squeeze over the pork and other ingredients.
Cover and cook on LOW for 9 hours without opening the lid during the cooking time.
When the cooking time is done, shred the meat with two forks right in the slow cooker. Discard any fatty pieces.
Serve on warmed corn tortillas and add desired toppings.
