Slow Cooker Chicken Marsala
Tender chicken cooked with Marsala wine, onion and mushrooms. Great over mashed potatoes.

Equipment
Slow Cooker - 4 quart or larger (I own and use this one from Crock-Pot)
Ingredients
2
lbs.
boneless skinless chicken breasts
about 3-4 chicken breasts
1 1/2
tsp.
sea salt
1/2
tsp.
ground black pepper
1
tsp.
oregano
3
cloves
garlic
minced
1/4
cup
shallot
minced
1
white onion
sliced
2
cups
mushrooms
sliced
6
slices
bacon
sliced, cooked and drained
1/2
cup
Marsala wine
1 1/4
cup
beef broth
Wait to add:
2/3
cup
heavy whipping cream
2
tbsp
chopped parsley
for garnish (optional)

Instructions
Add the chicken breasts to the slow cooker.
Sprinkle over the salt, pepper, and oregano.
Add the garlic, shallot, onion and mushrooms over the chicken.
Sprinkle over the bacon.
Pour over the Marsala wine and beef broth.
Place the lid on the slow cooker. Cook on HIGH for 4 hours or LOW for 6-8.
When the cooking time is done. Add the heavy cream and mix it into the broth.
Turn the slow cooker to HIGH for 30 minutes more and leave the LID OFF. To help thicken the sauce a bit.
Serve and enjoy! I serve half of a chicken breast for a serving. Alternately you can shred the chicken before serving.

Notes
Does the alcohol cook out of the sauce?
Since the slow cooker doesn't get to a high heat, some of the alcohol may remain.
Don't serve this dish to children or adults who don't drink alchocol.
What can I use instead of Marsala wine?
Madeira wine
Red wine - use your favorite!
Dry Sherry
Or use additional broth if you don't want to use wine.
