This one-pot Slow Cooker Seasoned Chicken, Potatoes and Green beans has a homemade dressing/marinade and will be your new favorite healthy dinner.
If you love this one-pot meal you need to see my Garlic Butter Chicken and Veggies, that recipe has the same easy one pot meal concept as this recipe. Or if you need just a recipe for chicken breasts, try my easy chicken breast recipe.
I’ve seen oven versions of this recipe, but most include an Italian dressing seasoning packet.
Instead of using a seasoning packet to flavor the sauce in this dish, I make a simple mixture of olive oil, lemon juice, garlic, and dried seasonings.
How to make a one pot chicken dinner:
- Boneless skinless chicken breasts – Can use chicken thighs or tenders.
- Fresh green beans – Frozen works well too.
- Red Potatoes – Cut into quarters or about 1/2 inch pieces.
- Homemade Italian dressing – Super quick to make, see my recipe below.
For the homemade dressing:
- Fresh lemon juice
- Olive oil
- Oregano
- Salt and pepper
- Onion powder
- Minced garlic
Can I use lemon juice out of a squeeze bottle?
- No. This recipe isn’t the time or place to use squeeze bottle lemon juice; the recipe will taste off if you use it.
- Lemons are cheap, be sure to grab them at the store.
Can I use a different vegetable than green beans?
Yes! If you aren’t a green bean fan, then try one of these substitutes.
- Broccoli
- Asparagus
- Canned or fresh corn
- Baby carrots or sliced carrots
- Extra potatoes
Can I use the Italian dressing mix instead of making the homemade dressing?
- Yes! You can forgo all the dressing ingredients and drizzle a half cup of butter over the seasoned chicken, potatoes and green beans then sprinkle an Italian dressing mix over.
- Follow the same cooking directions below.
- You can find the Italian dressing mix on the salad dressing aisle next to the ranch dressing packets.

I don’t do Italian sauces, any other ideas?
Change the seasonings but I would keep the base sauce the same.
Can I use pork chops instead of chicken?
Yes, pork chops would work well.
Made this recipe used riced cauliflower instead of potatoes frozen green beans. My husband who doesn’t like chicken said it was the best chicken he has tasted. He requested I make it again today so I am. I did you real lemon juice and Italian seasoning herbs. With the garlic and olive oil and salt and pepper and minced dried onion. It was excellent.
Too lemony. Husband and kids hated it
Prepared this meal with Yukon potatoes, 10 oz. frozen string green beans and Italian dressing and melted butter. It was sooooo tender and good. Chicken breasts shredded with fork. I sprayed crock with Pam to avoid chicken sticking to crock. Highly recommend this recipe.
Please know PAM is very bad for you ..research it….use butter
You can use the organic brand that has no propellents; I often buy that.
I agree with Carol. The chix breast eas stringy and a tough. If I make this again I would use chix thighs. The potaies and green beans were good.
This is one of my family’s favorite recipes, we tweak it a bit, that could help you. I use baby carrots instead of green beans, I double the liquid/spices part of the recipe and do a layer of the sauce over the chicken, and then more over the carrots/potatoes. I cook for about 8 hours. Also I add little broccoli pieces in the last 2 hours. I shred the chicken at the end, mix everything together. It turns out amazing. Real lemons too!
Oops I forgot, I also add lime juice.
I used bottled Italian dressing. It is delicious.
Can I prep this, put in in the freezer, for a crockpot dump?
Potatoes don’t do well in the freezer, you can probably do the chicken, sauce and green beans though.
This recipe looks delicious! Do I have to cut the potatoes or can I put them in whole?
I would cut them. The potaotes take the longest to cook.
Can I use baby yellow potatoes?
Yes, though you may want to cut them in half.
Can you use frozen green beans?
Yes!
Thanks!! Trying it tonight.
Can you make this with chicken tenderloins instead of breasts?
Yes, chicken tenderloins work well.
Meh, the chicken breast was a bit tough. I think dark meat would be better. Our broccoli was a bit too tangy. The potatoes and green beans were awesome.
