Slow Cooker Garlic Lemon Butter Artichokes

  • 3 Medium sized artichokes or 2 large ones.
  • salt
  • pepper
  • 2 garlic cloves, minced
  • ½ lemon
  • ¼ cup butter
  • 1 cup water
Slow Cooker Size:
  • 6-quart or larger
  1. Cut the bottoms off the artichokes so they sit flat. Also cut the very tops off the artichokes (see my photos, I did about a half inch. If you have a hard time getting the artichokes to fit, peel off a few off the leaves and that should allow them all to fit nicely.
  2. Add the artichokes to the slow cooker.
  3. Sprinkle over a pinch of salt and pepper, then add the garlic.
  4. Squeeze over the lemon juice. Cut the butter into slices and place on top of the artichokes. Add the water to the bottom of the slow cooker.
  5. Cover and cook on HIGH for 3.5 hours without opening the lid during the cooking time.
  6. Serve with melted butter (or mayonnaise if that's your thing).
